YuleTide Cranberry Pumpkin Cookies

Soft, cake like cookies made with beer!

1/2 cup softened butter
1 cup white sugar
1 teaspoon vanilla extract
1 egg
1 cup Punkin puree
2.4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries.  Frozen cranberries that have been thawed can be substituted
1 cup Heavy Seas Yuletide
2 teaspoons Whiskey Island Punkin Spyce.

Preheat oven to 375 degrees and grease cookie sheets.

In a large bowl, cream (mix) butter and sugar until light and fluffy.  Mix in vanilla, egg, pumpkin and Yuletide.  In a separate bowl, combine flour, baking soda, baking powder, salt and cinnamon, then stir into liquid mixture until well blended.  Cut the cranberries in half and stir into the mixture.  Drop by teaspoonfuls onto cookie sheets and bake for 10 to 12 minutes.

Peg Leg Chocolate Cake

 

 

 

 

Cake

1 box chocolate cake mix

½ c Peg Leg Stout

4 eggs

½ c water

½ c  vegetable oil

 1 3.5oz box chocolate pudding mix

 

Glaze (optional)

¼ c butter

1/8 c water

½ c sugar

¼ c Peg Leg

Semi sweet baking chocolate (optional)

 

Preheat oven to 325 degress. Butter & flour a 9in baking pan or bundt pan. Mix together cake mix, eggs, oil pudding mix, beer & water. Bake 1 hour or until set.  Dust with powered sugar.  Make your glaze by combining all ingredients and boiling for 5 minutes on high heat. Drizzle glaze over the cake.
