YuleTide Cranberry Pumpkin Cookies
Soft, cake like cookies made with beer!
1/2 cup softened butter
1 cup white sugar
1 teaspoon vanilla extract
1 egg
1 cup Punkin puree
2.4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries. Frozen cranberries that have been thawed can be substituted
1 cup Heavy Seas Yuletide
2 teaspoons Whiskey Island Punkin Spyce.
Preheat oven to 375 degrees and grease cookie sheets.
In a large bowl, cream (mix) butter and sugar until light and fluffy. Mix in vanilla, egg, pumpkin and Yuletide. In a separate bowl, combine flour, baking soda, baking powder, salt and cinnamon, then stir into liquid mixture until well blended. Cut the cranberries in half and stir into the mixture. Drop by teaspoonfuls onto cookie sheets and bake for 10 to 12 minutes.
